Superhero Flapjacks

Ingredients

  • 2 Bananas, medium
  • 1 cup Milk
  • 15 ml Vanilla extract
  • 1/2 Carrot, small
  • 1/2 Zucchini, small
  • 300 g Rolled oats
  • 1 cup Sultanas
  • 1/2 cup Mixed seeds

Method

  1. Preheat oven to 180°C (fan-assisted).
  2. Mash the 2 bananas in a large bowl using a fork.
  3. Add milk and vanilla to the bowl and mix together.
  4. Add grated carrot and zucchini and mix again.
  5. Add sultanas and seeds and mix again.
  6. Add oats and combine altogether.
  7. Transfer mixture onto a piece of baking parchment in the centre of a baking tin. Spread out the mixture and press down with a fork, ensuring it is evenly spread.
  8. Bake in the oven for 25-30 minutes.
  9. Remove once cooked and allow to cool before cutting into slices.
Notes
These flapjacks are superhero by name and by nature! They are jam packed full of nutrients and are particularly a good source of iron and fibre. They are a great snack for little ones to get involved with the preparation, on-the-go, or as part of a breakfast or pudding. They are suitable for school and kindergarten/nursery as they contain no nuts.

Storage
Pop in an airtight container and keep refrigerated, using within 3 days, or pop in the freezer and use within 3 months.
Serving suggestion
Serve with a cup of milk or yoghurt of your choice.
Variation
Instead of zucchini, use small pieces of broccoli. Use milk of your choice.
