Finely chop the onion and cut the carrot and sweet potato into small pieces, and set aside.
Crush the garlic and set aside.
Heat the oil in a large pan on a high heat, add the onion and garlic and cook for a few minutes until they start to soften.
Add the sweet potato, lentils, carrot and water to the pan. Bring to the boil and reduce the heat to simmer for approximately 25 minutes.
Allow to cool, then using a hand blender, blitz the mixture until combined together.
Reheat in the microwave or on the stove-top when ready to eat. Serve with bread or crackers.
Season to taste with salt if desired.
Notes
A mild soup suitable for children, and can be adapted for adults by simply adding more spices (try initially doubling and increase further as desired). Good source of protein and slow-release carbohydrates. Double or triple the recipe for bulk cooking and store as per the storage details below.
